Recipe of the Month- Healthy Egg Muffins

Makes 4


· 3 large eggs

· 2 spring onions

· 40g grated cheese

· 2 rashers of bacon

· Pinch of salt and pepper

· Optional extras: mushrooms, chives, diced red pepper, crumbling of feta cheese



· Muffin tin

· Mixing bowl

· Wooden spoon

· Silicone muffin cases (optional)

· Cheese grater

· Knife to chop onions/bacon





1. Preheat the oven to 180 degrees and pop the grill on

2. If you don’t have silicone muffin cases, grease a muffin tin using coconut oil or butter

3. Grill your bacon until cooked through, but not too crispy as it will continue to cook in the oven

4. Crack the eggs into a bowl, adding some milk if you only have small eggs. Whisk until fluffy

5. Grate your cheese using the small side of the grater

6. Finely chop the spring onion and the cooked bacon, and then add to the egg mix. You can chop and add any optional extras at this point too. Add your seasoning and give the whole mixture a good stir

7. Divide the mixture into the muffin cases, trying to evenly distribute the filling as much as possible

8. Bake in the preheated oven for approximately 20 minutes, or until cooked through and slightly golden on top

9. Leave to cool in the tin for around five minutes – if you try to remove them too quickly the mixture may be too warm and break up. Enjoy straight away or store in the fridge for a couple of days to enjoy as a breakfast on the go or quick, nutritious snack!
